In a large baking tray or roasting pan, combine the dried chicken, potato wedges, and optional onion wedges. If using, add the whole unpeeled garlic cloves to the tray.

Drizzle the olive oil over the chicken and vegetables. Sprinkle all the seasonings (salt, garlic powder, onion powder, paprika, coriander, and black pepper) evenly over everything in the tray.

Using your hands, mix everything together thoroughly, ensuring all the chicken and vegetables are well coated with the oil and spices.

Arrange the chicken pieces on top of the potatoes and onions in a single, even layer. This allows the chicken skin to crisp up nicely.

Carefully pour the water and lemon juice down the sides of the baking tray, avoiding pouring directly over the seasoned chicken to prevent washing off the spices.
