In a medium bowl, combine the chicken pieces with 1 tablespoon soy sauce, 1 tablespoon cornstarch, 1 teaspoon sesame oil, and 1/4 teaspoon black pepper. Mix well to coat the chicken. Set aside to marinate while you prepare the other ingredients.

In a small bowl, whisk together all the chow mein sauce ingredients: chicken broth, 2 tablespoons soy sauce, oyster sauce, honey, rice vinegar, 1 teaspoon cornstarch, and 1/2 teaspoon sesame oil. Set aside.

Cook the chow mein noodles according to package directions. If using fresh noodles, they may only need a quick blanch. If using dried, boil until al dente. Drain well and set aside.

Heat 1 tablespoon of vegetable oil in a large wok or a large skillet over medium-high heat. Add the marinated chicken in a single layer and cook for 3-5 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the wok and set aside.

Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.

Add the sliced yellow onion, julienned carrots, and sliced celery to the wok. Stir-fry for 3-4 minutes until the vegetables start to soften.

Add the shredded cabbage to the wok and continue to stir-fry for another 2-3 minutes until the cabbage is slightly wilted.

Return the cooked chicken to the wok with the vegetables. Add the cooked noodles. Pour the prepared chow mein sauce over everything.

Toss everything together gently for 1-2 minutes, ensuring the noodles and chicken are well coated with the sauce and heated through. If the sauce is too thick, add a splash of water or chicken broth.

Serve immediately, garnished with sliced green onions.
