Season the chicken pieces with garlic powder, onion powder, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat evenly.

Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.

In the same skillet (no need to clean it), melt 2 tablespoons butter over medium heat. Add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.

Pour in the chicken broth and heavy cream. Bring to a gentle simmer, stirring occasionally. If using, add the red pepper flakes.

Stir in the fresh spinach a handful at a time, allowing it to wilt before adding more. Continue cooking until all the spinach has wilted, about 2-3 minutes.

Reduce heat to low and stir in the 1/2 cup grated Parmesan cheese until melted and the sauce is smooth. Taste and adjust seasoning with salt and pepper if needed.

Add the cooked chicken back to the skillet with the sauce. Add the cooked pasta and toss to coat everything evenly. If the sauce is too thick, add a splash or two of the reserved pasta water until desired consistency is reached.

Serve immediately, garnished with fresh chopped basil and additional grated Parmesan cheese, if desired.
