Finely chop the 180g king prawns until a chunky paste forms. Transfer the chopped prawns to a mixing bowl.

To the bowl with the prawns, add the 1 finely sliced spring onion, 60g panko breadcrumbs, 2cm grated ginger, 1/2 finely chopped chilli, the zest and juice from 1/2 lime, 1 tablespoon light soy sauce, 1 egg, and a small handful of chopped coriander. Mix all the ingredients together thoroughly until well combined.

Take the 2 brioche buns and cut them in half horizontally. Divide the prawn mixture into 2 equal portions. Press one portion of the prawn mixture onto the cut side of each brioche bun half, forming a patty.

Place 4 tablespoons of sesame seeds in a shallow bowl. Press the prawn-coated side of each bun into the sesame seeds to coat it well.

In a separate bowl, combine the 1/4 finely shredded white cabbage, 1 tablespoon mayonnaise, and the juice from 1/2 lime. Mix the slaw ingredients together and season to taste.

Heat a shallow layer of oil in a pan over medium heat. Carefully place the brioche buns, prawn-side down, into the hot oil.

Cook the prawn side of the buns for around 8 minutes until golden brown and cooked through. The buns should be crispy and the prawn mixture firm.

To assemble, spread sriracha onto the cooked buns. Add a portion of the prepared slaw on top of the sriracha. Finish by sprinkling extra coriander over the slaw.
