Generously season the beef short ribs on all sides with salt and black pepper.

Heat 1 tablespoon of vegetable oil in a large, heavy-bottomed pan or Dutch oven over medium-high heat. Once the oil is shimmering, carefully add the seasoned short ribs to the pan, ensuring not to overcrowd it. Sear the ribs for 3-4 minutes per side, until they are deeply golden brown and caramelized. Work in batches if necessary.

Once all the short ribs are seared, transfer them to the crockpot. Add the roughly chopped garlic cloves, granulated sugar, white vinegar, and the entire bottle of Notoko sauce over the ribs in the crockpot.

Cover the crockpot and cook the short ribs on high heat for 4 hours, or on low heat for 6 hours, until the meat is fork-tender and easily pulls away from the bone.

Carefully remove the short ribs from the crockpot. Skim any excess fat from the sauce if desired. Serve the short ribs with the savory sauce over mashed potatoes, rice, or noodles.
