Drain the 10 ounce block of silken tofu for 10 minutes. After draining, pat it thoroughly dry with paper towels to remove any excess moisture. This step is crucial for the patty texture.

In a large mixing bowl, combine the 1 pound ground beef, 1 pound ground pork, the drained and patted dry silken tofu, the finely diced 1/2 small onion, 1 egg, 1/2 cup panko, 2 tablespoons milk, 1 teaspoon salt, and 1/2 teaspoon black pepper.

Mix all the patty ingredients together thoroughly by hand until well combined. Be careful not to overmix, as this can make the patties tough.

Form the mixture into approximately 16 small, round, and slightly flattened hamburger patties. They should be uniform in size for even cooking.

Heat a large skillet or grill pan over medium to high heat. Cook the patties in batches, if necessary, for 3 to 4 minutes per side, or until they are nicely browned and cooked through. Set the cooked patties aside on a plate.

Using the same pan with the meat drippings (do not clean it), add the finely diced 1/2 small onion and the 2 finely diced shiitake mushrooms (if using, or other chopped vegetables). Sauté until the vegetables are soft, scraping up any browned bits from the bottom of the pan.

Pour 2 cups of water into the pan with the sautéed vegetables and bring the mixture to a simmer.

Turn off the heat. Add 1/2 a box of hayashi rice roux to the pan. Stir continuously until the roux is completely melted and the gravy is smooth and thickened. If the gravy is too thick, you can add a splash more water; if too thin, simmer gently for another minute or two.

Serve the Tofu Hamburg Steaks immediately over cooked white rice, generously topped with the prepared gravy. Garnish with fresh chopped parsley, if desired.
