Dice the brown onion. In a large pan, fry the diced onion for a few minutes until softened, then transfer it to the slow cooker.

Generously season the beef brisket on all sides with salt and pepper.

In the same pan used for the onion, sear the seasoned beef brisket on all sides over a high heat. This should take approximately 30-45 minutes in total, ensuring a good crust forms. Once seared, transfer the brisket to the slow cooker with the onions.

Add the carrots, leek, and garlic cloves to the slow cooker around the beef.

Pour in the beef stock, then add the thyme, mixed herbs, Worcestershire sauce, and the oxo cube to the slow cooker.

Cover the slow cooker and cook on the low setting for approximately 8 hours, or until the beef is fork-tender.

Once cooked, carefully remove the beef brisket from the slow cooker and shred it using two forks.

While the beef is resting, add gravy granules to the liquid remaining in the slow cooker. Stir well until the gravy has thickened to your desired consistency.

Return the shredded beef to the slow cooker, stirring it into the gravy. Allow it to sit for 10-15 minutes to absorb the flavors.
