Prepare the sauce: In a medium bowl, combine the gochujang, gochugaru, 2 tablespoons of soy sauce, sugar (adjust to 3 tablespoons if not using plum syrup), plum syrup, vinegar, minced garlic, sesame oil, and toasted sesame seeds. If desired, add a touch of wasabi. Whisk until well combined and set aside.

Cook the beef brisket: Heat a large skillet or pan over medium-high heat. Add the thinly sliced beef brisket and 1 tablespoon of cooking wine (mirin). Pan-fry until the brisket is almost fully cooked, about 3-4 minutes.

Cook the noodles: Bring a large pot of water to a rolling boil. Add the somyeon noodles and cook according to package directions, typically 3-5 minutes. To maintain chewiness, add splashes of cold water to the pot along the way as the noodles cook.

Chill the noodles: Once cooked, immediately drain the noodles and rinse them thoroughly under cold running water, then transfer them to a bowl of ice water. Swirl the noodles in the ice water until they are completely chilled. Drain well and squeeze out any excess water completely.

Assemble the dishes: Divide the chilled and drained noodles among 4 serving bowls. Drizzle the prepared sauce over the noodles, adding to taste. Top each bowl with fresh salad greens, the seared beef brisket, and a halved boiled egg.
