Rinse 2 cups of basmati rice thoroughly until the water runs clear.

Transfer the rinsed rice to a rice cooker.

Pour in 1 can (400ml) of coconut milk.

Add 2 cups of water.

Add the 2 knotted pandan leaves.

Season with 1 teaspoon of salt.

Add 3 slices of ginger.

Stir all the ingredients gently to combine.

Cook the rice in the rice cooker according to its settings.

In a pan, fry 1 cup of dried anchovies until they are crispy. Remove and set aside.

In the same pan, add 1/2 cup of cooking oil.

Sauté 2 large sliced onions until they become fragrant and translucent.

Add 5 minced garlic cloves and 1 inch of sliced ginger to the pan. Continue to sauté until aromatic.

Stir in the blended paste made from 10 dried chilies. Cook this mixture until the oil separates from the sambal paste.

Pour in the tamarind paste (previously mixed with 1/4 cup water).

Add 1 tablespoon of sugar and 1 teaspoon of salt.

Simmer the sambal until it thickens to your desired consistency.

Return the fried anchovies to the pan and stir to combine them with the sambal.

Prepare 2 hard-boiled eggs by slicing them.

Slice 1 cucumber into rounds or desired shapes.

Measure out 1/4 cup of roasted peanuts.

Prepare an additional 1/4 cup of fried anchovies for garnishing.

Scoop a generous portion of the cooked Nasi Lemak rice onto a plate.

Spoon a desired amount of the Sambal Ikan Bilis next to the rice.

Arrange the sliced hard-boiled eggs and cucumber slices on the plate.

Sprinkle the roasted peanuts and the extra fried anchovies over the dish.

Serve immediately.
