If desired, remove the membrane from the back of the rib racks. Then, slice the racks into individual ribs. Place the individual ribs in a large bowl or on a baking sheet.

Coat the ribs thoroughly with the yellow mustard, ensuring all sides are covered. Season the ribs generously with your favorite beef rub.

Preheat your smoker to 275°F. Place the seasoned ribs directly on the smoker grates. Smoke the ribs for about 1 1/2 hours. At the 1-hour mark, begin spritzing the ribs with the diluted apple juice (1 cup apple juice diluted with equal parts water).

Once the internal temperature of the ribs reaches 175°F, carefully transfer them to a foil pan. Add the unsalted butter (cut into tablespoons), light brown sugar, honey, your favorite BBQ sauce, and the bourbon (if using). Toss the ribs to ensure they are well coated with the added ingredients. Cover the foil pan tightly with aluminum foil.

Return the covered foil pan with the ribs to the smoker. Continue smoking until the ribs reach an internal temperature of 205°F and are tender. This second phase should take approximately 1 more hour.

Uncover the ribs. Toss them again in the sauce mixture within the pan. Let the ribs set for 5–10 minutes before serving. The ribs should be sticky and smoky.
