In a medium bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, cornstarch, 1 teaspoon of sesame oil, and black pepper. Mix well to coat the beef. Set aside to marinate while you prepare other ingredients.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated beef and cook for 2-3 minutes, stirring frequently, until browned and cooked through. Remove the beef from the wok and set aside.

Add the broccoli florets to the wok. Stir-fry for 3-4 minutes until the broccoli is tender-crisp. If needed, add a splash of water (1-2 tablespoons) and cover for 1-2 minutes to steam the broccoli slightly.

Add the cold day-old rice to the wok. Break up any clumps with your spatula. Stir-fry for 3-5 minutes, ensuring the rice is heated through and slightly toasted.

Return the cooked beef and scrambled eggs to the wok with the rice and vegetables. Pour in 3 tablespoons of soy sauce and the oyster sauce (if using). Stir everything together until well combined and heated through.
