Heat a non-stick pan over medium heat. Scatter 3 generous tablespoons of rolled oats evenly onto the pan.

Lightly sprinkle the oats with about 1 teaspoon of water. This helps the oats soften slightly and adhere together.

Crack 2 large eggs directly over the oats in the pan. Gently use a spatula or the back of a spoon to spread the eggs out, covering the oat layer completely to form a thin, even base.

If desired, sprinkle the egg and oat mixture with 1/2 teaspoon of everything bagel seasoning or sesame seeds. Cook for 2-3 minutes, or until the egg is mostly set and the edges begin to crisp.

Carefully flip the entire oat and egg mixture over using a wide spatula. Cook for another 1-2 minutes until the other side is lightly golden.

On one half of the flipped oat-egg base, arrange your desired sandwich fillings: 2 slices of deli ham, 1/4 cup of mixed greens, 2 slices of tomato, and 1 tablespoon of ketchup. Place 1 slice of cheddar cheese on top of the other fillings.

Fold the empty half of the oat-egg base over the fillings to create a sandwich. The melting cheese will help 'glue' the sandwich together. Cook for an additional 30 seconds to 1 minute, or until the cheese is slightly melted and the sandwich is warmed through.

Carefully remove the oatmeal sandwich from the pan and serve immediately.
