In a medium bowl, combine the dark soy sauce, light soy sauce, oyster sauce, sesame oil, brown sugar, water, and cornstarch. Whisk all the ingredients together until well combined and the cornstarch is fully dissolved. Set aside.

Slice the mushrooms and peel and slice the garlic cloves.

Heat the oil in a large pan or wok over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they are deeply golden and caramelized, about 5-7 minutes.

Once the mushrooms are golden, add the sliced garlic to the pan. Cook for 30 seconds, stirring constantly, until fragrant. Be careful not to burn the garlic.

Add the pre-cooked udon noodles to the pan with the mushrooms and garlic. Give the prepared sauce mixture a quick whisk again, then pour it over the noodles.

Toss all ingredients together in the pan until the noodles are thoroughly coated with the sauce and the sauce has thickened slightly. This should take about 1-2 minutes.

Transfer the garlic mushroom udon to serving bowls. Garnish generously with chopped green onions before serving immediately.
