In a large bowl, add the mutton chops. Add 2 tablespoons of ginger-garlic paste, 1 tablespoon of green chili paste, and salt to taste. Add 1/2 teaspoon of turmeric powder, 1 tablespoon of red chili powder, 1 tablespoon of coriander powder, 1 teaspoon of cumin powder, and 1 teaspoon of garam masala.

Squeeze the juice from half a lemon over the chops. Add 2-3 tablespoons of yogurt. Mix all the ingredients thoroughly with your hands, ensuring the chops are well coated.

Cover the bowl and marinate for 30 minutes.

Heat 2-3 tablespoons of oil in a tawa or a wide pan over medium heat. Once the oil is hot, place the marinated mutton chops in a single layer in the pan.

Cover the pan and cook on a low flame for 20 minutes.

After 20 minutes, remove the lid, flip the chops, and add a splash of water to the pan. Cover again and cook for another 10 minutes on a low flame.
Remove the lid and continue cooking uncovered until all the water has dried up and the chops are well-fried and browned on all sides. Set the cooked chops aside.

In a separate pan, melt 1 tablespoon of butter. Add 1/2 teaspoon of cumin seeds and let them splutter.

Add 1-2 sliced green chilies and 1 teaspoon of ginger-garlic paste. Sauté for a few seconds. Add 1 finely chopped medium onion and cook until it turns golden brown.

Pour in approximately 1/2 cup of tomato puree. Add salt to taste, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, 1/2 teaspoon of cumin powder, 1/4 teaspoon of turmeric powder, and 1/2 teaspoon of garam masala.

Add a small amount of water to help the spices cook and prevent them from burning. Cook until the oil separates from the masala.

Stir in approximately 1/4 cup of cream (or more, to your preference). Crush 1 teaspoon of fenugreek leaves (Kasuri Methi) between your palms and add to the sauce. Mix well.

Add the previously cooked mutton chops to the creamy sauce in the pan. Toss gently to ensure the chops are fully coated with the sauce.

Garnish with fresh chopped coriander leaves, julienned ginger, and sliced green chilies. Serve hot.
