Preheat your oven to 425°F.

In a large bowl, combine the 1 pound of 97% lean ground beef, 2 teaspoons salt, 8 teaspoons black pepper, 2 tablespoons minced garlic, the finely diced red onion, and 8 teaspoons onion powder. Mix until well combined.

In a separate small bowl, whisk the 8 eggs until well combined.

Prepare a large piece of parchment paper by coating it lightly with cooking spray. Dip one rice paper sheet into the whisked eggs, ensuring it is fully moistened.

Place the wet rice paper sheet on the prepared parchment paper. Take 1/4 of the seasoned ground beef mixture and form it into a long, thin line from the top to the bottom of the rice paper. Place two green leaf lettuce leaves and 1 teaspoon of low-fat mozzarella cheese on top of the beef mixture.

Carefully fold over the rice paper, encasing the filling, to create a long, thin log or burrito shape. Repeat this process three more times for the remaining rice paper sheets and filling, making a total of four logs.

Using scissors, cut each of the four rice paper logs into 1-inch pieces to create the burger pops.

Lightly spray the burger pops with cooking spray and arrange them on a baking sheet. Place them in the preheated oven for 8 to 10 minutes, or until they are fully cooked through and have a crispy, golden-brown exterior.

While the burger pops are cooking, prepare the dipping sauce. In a separate bowl, combine 2 cups of 0% fat Greek yogurt, 12 tablespoons ketchup, 8 teaspoons Worcestershire sauce, 8 teaspoons pickle juice, 4 tablespoons Dijon mustard, 4 teaspoons garlic powder, and 4 teaspoons onion powder. Mix thoroughly until smooth and well combined.
