Add the sliced beef to a bowl and season with 1/2 tablespoon soy sauce, 1/2 tablespoon mirin, salt, and black pepper. Mix well. For best results, let it marinate for 15–20 minutes.

Add 1/4 cup cornstarch to the marinated beef and toss until every piece of beef is lightly and evenly coated.

For a thicker sauce, stir together 1 teaspoon cornstarch and 1 tablespoon water in a small bowl to create a slurry. Gradually add the slurry to the simmering sauce, stirring constantly, until the sauce reaches your desired consistency.
