Slice the 150g beef (flank or sirloin) against the grain into thin pieces. In a bowl, combine the sliced beef with 1 tablespoon of oil, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of sugar, 1 teaspoon of white pepper, 1/2 teaspoon of baking soda, 1 tablespoon of Shaoxing wine, 1 tablespoon of water, and 1 teaspoon of cornstarch. Mix well until thoroughly combined. Let the beef marinate for 15 minutes.

While the beef is marinating, prepare the fried rice sauce. In a small bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1/2 teaspoon of sugar, 1/4 teaspoon of white pepper, 1 tablespoon of Shaoxing wine, 1 tablespoon of water, and 1 teaspoon of cornstarch. Mix well and set aside.

Heat a wok over high heat until it is smoking hot. Add 1 tablespoon of oil to the wok. Add the marinated beef and stir-fry until it is about 80% cooked through, approximately 1-2 minutes. Remove the beef from the wok and set it aside.

Add the 100g broccoli to the same hot wok. Stir-fry until the broccoli is tender-crisp, about 2-3 minutes. Remove the broccoli from the wok and set it aside with the beef.

Add 1 tablespoon of oil to the wok. Add the 3 minced cloves of garlic, 1 inch of minced ginger, and 1/2 diced onion. Sauté until fragrant, typically 30 seconds to 1 minute.

Add the 200g day-old cooked rice to the wok. Use the back of a spatula or spoon to break up any clumps in the rice. Stir-fry the rice thoroughly for 2-3 minutes, ensuring it heats through and some moisture evaporates.

Pour the pre-mixed fried rice sauce over the rice in the wok. Return the previously cooked beef and broccoli to the wok. Stir-fry all the ingredients together until well combined, heated through, and the rice appears 'nice and dry', about 2-3 minutes.

Serve the beef and broccoli fried rice immediately. Garnish with chopped spring onion if desired.
