Prepare the sourdough bread: Take four slices of sourdough bread. Using a 2-inch ring cutter, cut two circular holes into the center of each of these four slices. Discard the removed bread circles. Butter one side of all eight slices of sourdough bread (four with holes, four solid).

Preheat a large griddle or skillet over medium-low heat. Place the eight slices of center cut shoulder bacon onto the griddle. Cook, flipping occasionally, until crisp and caramelized, about 8 to 10 minutes. Season with a pinch of salt and pepper while cooking. Remove bacon from griddle and set aside, reserving bacon fat on the griddle.

Add the four large, thick white onion rings to the griddle with the reserved bacon fat. Cook until softened and lightly caramelized, about 5 to 7 minutes per side. Season with a pinch of salt and pepper. Once cooked, place the onion rings on top of the cooked bacon.

Place the four buttered solid sourdough slices (butter-side down) onto the griddle and toast until golden brown, about 2 to 3 minutes. Remove and set aside. Place the four buttered holed sourdough slices (butter-side down) onto the griddle. Add a small pat of butter into each of the two holes in the bread. Crack one egg into each hole. Cook until the egg whites are set and the bread is golden brown, about 3 to 4 minutes. Carefully flip the bread and eggs, and cook for another 30 seconds to 1 minute for a runny yolk, or longer for a firmer yolk. Remove from griddle and set aside.

Return the cooked bacon and onion rings to the griddle. Place one slice of sharp cheddar cheese on top of each stack of bacon and onions. Allow the cheese to melt slightly, about 1 to 2 minutes.

Assemble The Eggonator: Take the four toasted solid sourdough slices (the ones without holes). Spread a generous amount of mayonnaise on the toasted side of each slice. Layer the melted cheddar cheese, bacon, and onion rings onto the mayonnaise-covered bread. Sprinkle a handful of lightly crushed Doritos chips over the cheese, bacon, and onions.

Carefully place one 'egg in a hole' sourdough slice on top of each assembled sandwich, with the eggs facing down onto the Doritos, to serve as the top bun. Cut each sandwich in half and serve immediately.
