Prepare the Red Wine Caramelized Onions: Thinly slice the 2 onions. In a large skillet or Dutch oven, melt 2 tablespoons of butter over medium-low heat. Add the thinly sliced onions and cook for 30 minutes, stirring occasionally, until they are deeply golden brown and softened.

Add 1/2 cup of red wine and 1 tablespoon of brown sugar to the caramelized onions. Season with salt and black pepper to taste. Continue cooking for another 10-15 minutes, stirring frequently, until the liquid has reduced and the onions are fully caramelized and jam-like. Remove from heat and set aside.

Prepare the Whipped Brie: Remove the rind from the 8 ounces of brie cheese. Place the brie into a food processor. Add 2 tablespoons of heavy cream and a pinch of salt and black pepper. Process the mixture until it becomes smooth, light, and whipped, about 1-2 minutes. Transfer to a small bowl and set aside.

Prepare the Crostini: Preheat your oven to 375°F. Arrange the sliced baguette rounds on a baking sheet. Lightly brush each side of the baguette slices with olive oil. Toast in the preheated oven for 8-12 minutes, flipping halfway through, until golden brown and crisp. Remove from oven and let cool slightly.

Prepare the Ribeye Steak: Pat the ribeye steak dry thoroughly with paper towels. Rub the steak generously with 1 tablespoon of olive oil. Season all sides of the steak generously with salt and black pepper. Heat a heavy-bottomed skillet (cast iron works best) over high heat until smoking.

Carefully place the seasoned ribeye steak in the hot skillet. Sear for 3-5 minutes per side for medium-rare (internal temperature 130-135°F), or to your desired doneness. Use a meat thermometer for accuracy. Once cooked, transfer the steak to a cutting board and let it rest for 5-10 minutes before thinly slicing against the grain.

Assemble the Crostini: On each toasted crostini slice, spread a thin layer of balsamic fig jam. Add a dollop of the prepared whipped brie on top of the jam. Place a few thin slices of the cooked ribeye steak on top of the whipped brie. Finish by adding a small spoonful of the red wine caramelized onions on top.

Arrange the assembled crostini on a serving platter and serve immediately.
