Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or foil.

Using kitchen shears, carefully cut down the middle of the top shell of each lobster tail, stopping just before the tail fin. Be careful not to cut through the meat.

Gently open the cut shell and carefully pull the raw lobster meat upwards, separating it from the shell but leaving it attached at the tail end. Place the pulled-up lobster meat on top of the shell, creating a bed for the stuffing.

In a medium bowl, combine the 2 tablespoons of softened butter, 2 tablespoons of garlic paste, 1 tablespoon of chopped parsley, 1/4 cup of grated Parmesan cheese, and 1/4 cup of breadcrumbs. Season with salt and pepper to taste.

Mix all the stuffing ingredients thoroughly until well combined and a cohesive mixture forms.

Take a portion of the prepared stuffing and firmly pack it around the exposed lobster meat on top of each shell. Ensure the meat is fully covered and the stuffing is well-adhered.

In a separate small bowl, melt 1 tablespoon of butter. Add 1 tablespoon of minced garlic, 1 tablespoon of chopped parsley, and 1 tablespoon of fresh lemon juice to the melted butter. Season this basting mixture with salt and pepper to taste.

Generously brush the stuffed lobster tails with the prepared basting mixture. Place the lobster tails on the prepared baking sheet.

Bake the lobster tails in the preheated oven for 15 minutes, or until the lobster meat is opaque and cooked through.

After baking, switch your oven to broil. Broil the lobster tails for an additional 3-5 minutes, watching carefully to prevent burning, until the stuffing is golden brown and slightly crispy.

Garnish the double-stuffed, double-baked lobster tails with fresh chopped parsley before serving immediately.
