Cut the 3 pounds of pork butt and 3 pounds of pork shoulder into 1-inch pieces.

Place the cut pork pieces into a food processor and pulse until the meat is a fine grind. You may need to do this in batches to avoid overcrowding the food processor.

Transfer the finely ground pork into a large mixing bowl.

Add the 1/2 cup of ice water, 2 tablespoons of pink salt, 2 tablespoons of regular salt, 1 tablespoon of sugar, 1 tablespoon of garlic powder, 1 tablespoon of paprika, 1 tablespoon of onion powder, 1 teaspoon of ground ginger, and 1 teaspoon of white pepper to the bowl with the pork.

Mix all the ingredients thoroughly until well combined. Use your hands to ensure everything is evenly distributed and the mixture becomes cohesive.

Take a standard loaf pan and line it with parchment paper, leaving an overhang on the sides to help with removal later.

Pack the mixed pork mixture tightly into the lined loaf pan, making sure to eliminate all air bubbles during the packing process. Press down firmly with your hands or a spatula.

Preheat your Traeger or any smoker to 200°F. Once preheated, place the loaf pan containing the pork mixture into the smoker and smoke for 2 hours.

After 2 hours, carefully remove the loaf pan from the smoker.

Place heavy cans or other weights on top of the loaf to press it down. This helps to compact the meat and achieve the desired texture. Transfer the weighted loaf pan to the fridge and let it chill overnight (for at least 12 hours).

The next day, remove the homemade Spam from the loaf pan by lifting the parchment paper overhang.

Slice the homemade Spam into your desired thickness, typically about 1/4 to 1/2 inch thick.

To serve, pan fry the sliced Spam in a lightly oiled skillet over medium heat until it turns golden brown and crispy on both sides.
