Preheat a large non-stick skillet over medium heat. Once hot, place generous amounts of shredded mozzarella cheese into the pan, forming several separate, roughly circular piles. Ensure there is enough space between each pile for the cheese to spread and crisp.

While the cheese begins to melt, take the 2 hard-boiled eggs and carefully cut each one in half lengthwise.

Once the mozzarella starts to melt and bubble, place each egg half, cut side down, onto a pile of the melting mozzarella in the pan. The mozzarella should begin to bubble and crisp around the edges of the egg.

Allow the mozzarella to cook around the eggs until it becomes crispy and golden to dark brown. This may take 3-5 minutes, depending on your stove and pan. The cheese should turn a deep reddish-brown and become very crispy.

Using a spatula, carefully flip the mozzarella-encased eggs to ensure the cheese is fully crispy on both sides of the melted portion, or to cook it further if desired until uniformly golden and crisp.

While the eggs are cooking, toast the 2 slices of bread to your desired crispness.

Mash the ripe avocado in a small bowl. Spread the mashed avocado generously over the 2 slices of toasted bread.

Once the crispy mozzarella eggs are ready and the cheese is deeply golden and firm, remove them from the pan and place them onto a plate.

Place the crispy mozzarella egg halves (4 halves from 2 eggs) on top of the mashed avocado toast.

Drizzle chili oil generously over the crispy mozzarella eggs and avocado toast.

The dish is now ready to be cut and served immediately while warm and crispy.
