Prepare the chicken: Cut the chicken breast into thin strips. In a medium bowl, combine the chicken strips with 1 tablespoon of soy sauce, 1 tablespoon of Shaoxing wine, 1 teaspoon of cornstarch, and 1 teaspoon of oil. Mix well to ensure the chicken is evenly coated. Set aside to marinate while you prepare other ingredients.

Prepare the sauce: In a separate small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of brown sugar, 1 teaspoon of sesame oil, and 1/2 teaspoon of white pepper until all ingredients are thoroughly combined and the sugar has dissolved.

Cook the noodles: Bring a large pot of water to a rolling boil. Add the chow mein noodles and cook according to the package instructions until al dente. Drain the noodles thoroughly and set aside.

Prepare the vegetables: Slice 1/2 onion, julienne 1 carrot, shred 1 cup of cabbage, and slice 2 green onions. Have 1 cup of bean sprouts ready for later use.

Cook the chicken: Heat 2 tablespoons of oil in a large wok or a large, deep skillet over high heat until shimmering. Add the marinated chicken strips and stir-fry for 3-5 minutes, or until they are cooked through and lightly browned. Remove the cooked chicken from the pan and set it aside on a plate.

Sauté the vegetables: If necessary, add a little more oil to the wok. Add the sliced onion and julienned carrots. Stir-fry for 2-3 minutes until they begin to soften slightly.

Add more vegetables and noodles: Add the shredded cabbage to the wok and stir-fry for another 1-2 minutes until it starts to wilt. Then, add the cooked chow mein noodles to the wok, spreading them out evenly.

Combine and finish: Return the cooked chicken to the wok with the noodles and vegetables. Pour the prepared chow mein sauce evenly over all the ingredients. Add the bean sprouts and sliced green onions to the wok.

Toss and serve: Using tongs or two spatulas, toss everything together thoroughly for 1-2 minutes until the noodles, chicken, and vegetables are well coated with the sauce. Ensure the bean sprouts retain some crispness. Serve the chicken chow mein hot immediately.
