Cut the light mozzarella into stick-like pieces. Aim for uniform sizes for even cooking.

Prepare three separate bowls for the breading station. In the first bowl, add the 10 g of flour. In the second bowl, crack and whisk the egg thoroughly. In the third bowl, add the 30 g of breadcrumbs. You can also add the grated light cheese to the breadcrumbs at this stage for extra flavor.

Take each mozzarella stick and thoroughly coat it in the flour from the first bowl, ensuring all sides are covered. Gently shake off any excess flour.

Dip each flour-coated mozzarella stick into the whisked egg from the second bowl, making sure it is fully covered.

Immediately transfer the egg-dipped stick to the breadcrumbs in the third bowl, coating it completely. Press gently to ensure the breadcrumbs adhere well.

For a double coating, which helps create a crispier exterior and prevents cheese from leaking, dip the breadcrumb-coated stick back into the whisked egg (Bowl 2), then coat it again in the breadcrumbs (Bowl 3).

Place the double-coated mozzarella sticks into an air fryer basket in a single layer, ensuring they are not overcrowded. You may need to cook in batches depending on the size of your air fryer.

Air fry the mozzarella sticks at 180°C for 10 minutes, or until golden brown and the cheese is melted and gooey. Halfway through cooking, you can gently shake the basket or flip the sticks for even browning.

Carefully remove the cooked mozzarella sticks from the air fryer and serve immediately. Enjoy the warm, stretchy cheese!
