Using a spiralizer, slice the cucumber into noodles. Place the cucumber noodles into a large bowl.

Sprinkle 1 teaspoon of salt evenly over the cucumber noodles. Mix the salt into the cucumber noodles thoroughly and let them sit for 10 minutes to draw out excess water.

After 10 minutes, firmly squeeze out as much excess water as possible from the cucumber noodles. You can do this by hand or by pressing them in a colander.

In a separate medium-sized bowl, combine all the sauce ingredients: soy sauce, rice vinegar, sesame oil, sugar, minced garlic, 1 teaspoon of sesame seeds, and red pepper flakes.

Whisk the sauce ingredients together until they are well combined and the sugar has dissolved.
