While the noodles cook, prepare the peanut sauce. In a medium bowl, whisk together the creamy peanut butter, low sodium soy sauce, rice vinegar, toasted sesame oil, honey, grated fresh ginger, minced garlic, and chili garlic sauce.

Gradually whisk in the water, 1 tablespoon at a time, until the sauce reaches a smooth, pourable consistency. Taste the sauce and adjust seasoning (add more soy sauce for saltiness, honey for sweetness, or chili garlic sauce for heat) if desired.

Once the noodles are cooked, drain them thoroughly using a colander. Rinse the noodles with cold water until they are completely cool to stop the cooking process and prevent them from sticking together. Drain very well again.
