Preheat your oven to 375°F. Line a large baking sheet with parchment paper for easy cleanup.

Take a stack of wonton wrappers and cut them diagonally to form triangles. Arrange the cut wonton triangles in a single layer on the prepared baking sheet. Lightly spray the wonton triangles with cooking spray.

Bake the wonton chips in the preheated oven for 6-8 minutes, or until they are golden brown and crispy. Keep a close eye on them as they can burn quickly. Remove from the oven and let cool slightly.

While the chips are baking, prepare the sriracha mayo. In a small bowl, combine the mayonnaise and sriracha sauce. Mix well until fully combined and set aside.

In a medium mixing bowl, combine the chopped sushi-grade tuna, diced mango, diced English cucumber, finely diced red onion, and 2 tablespoons of thinly sliced green onions.

Drizzle the sesame oil, soy sauce, and fresh lime juice over the tuna mixture. Sprinkle in 1 teaspoon of sesame seeds. Gently mix all the ingredients together until evenly combined.

To assemble the nachos, arrange the prepared golden brown wonton chips on a large serving platter. Spoon the tuna poke mixture generously over the wonton chips.

Drizzle the sriracha mayo over the poke and chips. Garnish with additional chopped green onions and sesame seeds. Optionally, add sliced or diced avocado as a topping.
