Preheat your oven to 200°C / 390°F (standard) or 180°C (fan).

Place the halved baby potatoes, carrots cut into 2"/5cm pieces, red onions cut into 8 wedges, minced garlic cloves, olive oil, dried thyme, dried oregano, salt, and pepper in a large bowl. Toss all the ingredients well to ensure they are evenly coated.

Add the 8 sausages of your choice to the same bowl with the seasoned vegetables. Toss briefly to combine.

Pour all the contents from the bowl into a large baking pan. Arrange the sausages on top of the vegetables.

In the same bowl that was used for the vegetables, add 2 tablespoons (30g) of unsalted butter and 2 1/2 tablespoons of plain / all purpose flour. Whisk these together until combined. Add a bit of the 2 cups (500 ml) beef broth/stock and whisk thoroughly to create a smooth slurry, ensuring there are no lumps. Then, whisk in the remaining beef broth/stock until the mixture is smooth.

Carefully pour the prepared gravy mixture down the side of the pan. It is important not to pour the gravy directly over the sausages or vegetables.

Optionally, spray the sausages with oil. This helps them to brown slightly better, especially if using lean sausages.

Bake the pan in the preheated oven for 25 minutes.

After 25 minutes, remove the pan from the oven and turn the sausages over. Optionally, spray them again with oil. Return the pan to the oven and bake for a further 25 minutes, or until the sausages are nicely browned and the potatoes are soft and cooked through.

Once cooked, remove from the oven and serve the sausages and vegetables with the gravy on top. If desired, garnish with fresh thyme leaves.
