Combine the blackberries, agave or maple syrup, filtered water, and lemon zest in a saucepan. Place the saucepan on the stovetop over medium heat.

Cook the jam mixture for 7 to 10 minutes, stirring occasionally, until the berries soften and the mixture thickens slightly. Remove from heat.

Lightly mash the cooked blackberries with a fork or potato masher. Stir in the chia seeds until well combined.

Set the blackberry jam aside and allow it to cool completely to room temperature. This will allow the chia seeds to thicken the jam.

In a separate bowl, mix the mashed dragonfruit into the vegan Greek yogurt until thoroughly combined. Set aside.

To assemble the parfaits, take 3 to 4 (16-ounce) mason jars. Divide the dragonfruit yogurt mixture evenly among the bottoms of the jars.

Next, spoon an even layer of the cooled blackberry jam over the yogurt in each jar.

Arrange the sliced fresh blackberries and strawberries on top of the jam layer.

Finish each parfait with a generous sprinkle of your chosen granola.

Store the assembled parfaits in the refrigerator and consume within 4 to 5 days for optimal freshness.
