Finely dice half a red onion. Prepare all other ingredients for easy access.

Heat a drizzle of oil in a medium pan over medium heat. Add 1 tablespoon of butter and allow it to melt.

Add the finely diced red onion to the pan and sauté, stirring occasionally, until it softens, about 3-4 minutes. Then, add 1 1/2 tablespoons of crushed garlic and continue to cook for another minute until fragrant.

Pour in 2 1/2 tablespoons of Worcestershire sauce and 1/4 cup of tomato sauce. Stir the mixture well to combine.

Pour in 1/2 cup of thickened cream and stir it into the sauce until it is well combined and begins to thicken slightly.

Add a pinch of freshly ground black pepper to the sauce. Pour in 1/4 cup of beef stock or jus and whisk thoroughly to combine all ingredients and achieve a smooth consistency. Continue to cook, stirring occasionally, until the sauce reaches your desired thickness, about 3-5 minutes.

To serve, place a portion of cooked fries on a plate. Top the fries with a cooked steak. Spoon a generous amount of the prepared Diane Sauce over the steak and fries. Garnish with chopped chives.
