In a medium bowl, combine chicken pieces with 2 tablespoons soy sauce, honey, sesame oil, garlic powder, and black pepper. Toss to coat. Sprinkle in cornstarch and toss again until evenly coated. Set aside to marinate while preparing other ingredients.

Heat 2 tablespoons vegetable oil in a large, deep skillet or Dutch oven over medium heat. Add the thinly sliced rehydrated shiitake mushrooms and sliced garlic. Reduce heat to medium. Add 1 tablespoon vegetable oil to the skillet. Add diced yellow onion and sauté until softened, about 3-4 minutes. Add sliced fresh shiitake mushrooms and cook until tender, about 3-5 minutes.

Stir in minced garlic and grated ginger and cook for 1 minute until fragrant.

Add the rinsed rice to the skillet and stir to coat with the aromatics. Pour in chicken broth, 3 tablespoons soy sauce, and oyster sauce (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

After 15 minutes, stir in the grated carrot, chopped bok choy, and frozen edamame. Place the cooked chicken pieces on top of the rice and vegetables. Cover again and continue to cook for another 5-7 minutes, or until the liquid is absorbed and the rice is tender.

Remove from heat and let stand, covered, for 5 minutes. Fluff the rice gently with a fork.
