Slice the chicken breasts into strips.

Heat the olive oil in a large pan or skillet over medium-high heat.

Add the sliced chicken to the hot pan. Season generously with salt and black pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Once cooked, remove the chicken from the pan and set aside.

To the same pan, add the minced garlic and cook for approximately one minute, stirring constantly until fragrant.

Deglaze the pan with the white wine, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let it cook for about one minute, allowing the alcohol to evaporate.

Pour in the chicken stock and double cream. Bring the mixture to a gentle simmer, stirring occasionally.

Add the zest and juice of one lemon to the sauce. Stir to combine.

Stir in the fresh spinach and allow it to wilt into the sauce, which should take about 1-2 minutes.

Return the cooked chicken to the pan with the sauce.

Add the cooked pasta to the pan. Toss everything together thoroughly to coat the pasta and chicken evenly with the creamy lemon sauce.

Serve the pasta immediately, topped with grated Parmesan cheese and fresh chopped parsley.
