Add the diced chicken breast, fajita seasoning, sliced onion, tinned chopped tomatoes, and passata to the slow cooker. Stir all ingredients well to combine.

Cook the mixture on high for 3 hours.

After 3 hours, add the sliced capsicum, pasta, and chicken stock to the slow cooker. Stir thoroughly to ensure the pasta is submerged. Cook on medium for 45 to 60 minutes, or until the pasta is tender. Stir once or twice during this period if possible to prevent sticking.

Once the pasta is tender, stir through the light cream cheese until it has melted and the sauce is creamy.

If desired, top the pasta with a little grated light cheese. Place the lid back on the slow cooker for 5 minutes to allow the cheese to melt slightly, then serve.
