Season the spare ribs generously with salt and black pepper.

Heat 2 tablespoons of oil in a large pot or Dutch oven over medium-high heat.

Add the cut potatoes to the hot oil and fry until they are golden brown on all sides, about 5-7 minutes. Remove the fried potatoes from the pot and set aside on a plate lined with paper towels.

In the same pot, add the seasoned pork ribs and brown them on all sides, about 8-10 minutes. You may need to do this in batches to avoid overcrowding the pot. Remove the browned ribs from the pot and set aside with the potatoes.

Reduce the heat to medium. Add the chopped onion to the pot and sauté until softened and translucent, about 3-4 minutes.

Add the minced garlic to the pot and sauté for another 1 minute until fragrant.

Return the browned pork ribs to the pot.

Pour in the soy sauce, unsweetened pineapple juice, banana or tomato ketchup, and water. Stir well to combine all the ingredients.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the ribs are tender.

Add the fried potatoes to the simmering ribs. Continue to cook, covered, for another 10 minutes, or until the potatoes are fork-tender.

Stir in the frozen green peas and cook for 2 minutes, or until heated through.

Remove the pot from the heat. Stir in the shredded cheese until it is fully melted and incorporated into the sauce.

Taste and adjust seasoning with additional salt and pepper if needed. Serve hot, optionally with steamed rice.
