Bring a large pot of salted water to a boil. Add the 1 pound of pasta and cook according to package directions until al dente. Once cooked, drain the pasta and rinse it thoroughly with cold water to stop the cooking process and cool it down. Set aside.

Season both sides of the 1 1/2 pounds of chicken breast with 1 teaspoon salt and 1 teaspoon pepper. Heat 1 tablespoon olive oil in a large pan over medium-high heat. Cook the chicken until it's golden brown on both sides and cooked through. Once cooked, remove the chicken from the pan and let it cool slightly.

While the chicken cools, finely chop 1/2 cup sun-dried tomatoes and 1/2 red onion. Chop 1/4 cup fresh basil. Crumble 1 cup of feta cheese.

In a jar, combine 1/4 cup fresh lemon juice, 1 tablespoon Dijon mustard, 1 teaspoon honey, 1 teaspoon salt, 1 teaspoon pepper, and 1/2 cup olive oil. Secure the lid and shake vigorously until the dressing is emulsified and well combined.

Once the cooked chicken has cooled, dice it into bite-sized cubes. In a large mixing bowl, combine the cooled pasta, diced chicken, chopped sun-dried tomatoes, diced red onion, crumbled feta cheese, and chopped fresh basil.

Pour the prepared vinaigrette over the pasta salad ingredients. Toss everything together until all ingredients are evenly coated with the dressing. Serve immediately or chill for later.
