Roughly chop the 1/2 yellow onion. Peel the entire head of garlic. Peel the 1-inch piece of ginger.

Add the chopped onion, peeled garlic, and peeled ginger into a food processor.

To the food processor, add the 2 tablespoons of gochujang, 1/4 cup of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of brown sugar, and 1 tablespoon of sesame oil.

Blend all ingredients in the food processor until the mixture is smooth and forms a thick marinade.

Pat the chicken thighs dry thoroughly with paper towels. This helps the marinade adhere better and promotes better searing.

If desired, score the chicken thighs with shallow cuts on one side. This allows the marinade to penetrate deeper and helps the chicken cook more evenly.

Place the prepared chicken thighs in a large bowl or a resealable plastic bag. Pour the blended marinade over the chicken.

Mix the chicken and marinade thoroughly, ensuring all pieces are well coated. Cover the bowl or seal the bag.

Marinate the chicken for at least 30 minutes at room temperature, or for best results, refrigerate overnight (up to 12 hours).

Preheat a griddle or grill to medium-high heat. Once hot, place the marinated chicken thighs on the cooking surface.

Cook the chicken for 6-8 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (74°C). The chicken should have a nice char on the outside.

Remove the cooked chicken from the griddle/grill and let it rest for a few minutes before slicing or serving.
