Bring a large pot of water to a rolling boil. Add 1 pound of ditalini pasta to the boiling water and cook according to package directions until it reaches an al dente texture. Once cooked, drain the pasta thoroughly in a colander and rinse with cold water to cool it down and prevent sticking. Set aside.

Heat 1 tablespoon of olive oil in a large pan or skillet over medium-high heat. Add 1 pound of ground beef to the pan. To make the chipotle lime dressing, combine all the dressing ingredients in a blender: 1 cup plain yogurt, 1 cup mayonnaise, 2 ounces of chipotle peppers in adobo sauce, the juice from 2 limes, 1 1/2 teaspoons of salt, 1 1/2 teaspoons of black pepper, 2 teaspoons of smoked paprika, 2 teaspoons of onion powder, and 2 teaspoons of garlic powder. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed.

In a very large mixing bowl, combine the cooled ditalini pasta, the cooked taco meat, chopped roma tomatoes, diced red onion, chopped cilantro, diced jalapeños, sweet corn, pinto beans, black beans, and 1 1/2 cups of shredded Mexican cheese.

Pour the prepared chipotle lime dressing over all the ingredients in the large bowl. Toss everything together thoroughly using large spoons or tongs until all components are evenly coated with the dressing.
