In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic until well combined. This will be your teriyaki marinade.

Place the chicken thighs in a large resealable bag or a shallow dish. Pour about 1/2 cup of the teriyaki marinade over the chicken, ensuring all pieces are coated. Reserve the remaining marinade for later use as a sauce.

Heat the sauce over medium heat, stirring constantly, until it thickens to your desired consistency, about 3-5 minutes. Be careful not to boil too vigorously.

Once the chicken is cooked, remove it from the oven. You can brush the chicken with some of the thickened teriyaki sauce before serving, or serve the sauce on the side.
