Preheat a mini waffle maker according to manufacturer's instructions. Lightly coat the waffle maker plates with cooking spray.

Place one boiled small potato into the center of the preheated waffle maker. Generously sprinkle 1/4 cup of shredded cheese over the potato.

Close the waffle maker and cook for 5-8 minutes, or until the potato is pressed into a waffle shape, golden brown, and crispy, with the cheese melted and caramelized around the edges. Carefully remove the potato waffle and set aside on a plate. Repeat with the remaining potatoes and cheese to make 3 more waffles.

While the waffles are cooking, prepare the fried eggs. Heat a non-stick skillet over medium heat. Add a small amount of cooking spray or butter, if desired. Crack one egg into the skillet and cook sunny side up until the whites are set and the yolk is still runny, about 2-3 minutes. Repeat for the remaining 3 eggs.

To assemble each serving, place one crispy potato waffle on a serving plate. Arrange 1/4 of the sliced avocado neatly on top of the waffle.

Sprinkle 1/2 teaspoon of everything bagel seasoning generously over the avocado.

Gently place one freshly fried sunny-side-up egg on top of the avocado.

Drizzle 1 teaspoon of chili crisp oil over the fried egg and sprinkle with 1/2 tablespoon of chopped green onions.

Serve immediately and enjoy, breaking the runny yolk to meld with the chili crisp, avocado, and crispy potato waffle base.
