Preheat your oven to 400°F (200°C).

Add the cherry tomatoes to a baking dish. Place the block of goat cheese in the center of the tomatoes.

Drizzle the olive oil over the tomatoes and goat cheese. Add the minced garlic. Sprinkle the dried basil, dried thyme, and Italian seasoning evenly over everything.

Lightly stir the tomatoes and seasonings around the goat cheese in the baking dish. Bake for 25-30 minutes, or until the tomatoes are softened and bursting, and the goat cheese is melted and slightly browned.

While the tomato and goat cheese mixture is baking, cook your pasta of choice according to the package directions until al dente. Before draining, reserve 1/2 cup of the pasta water.

Once the baking dish is removed from the oven, use a fork or spoon to mash the roasted tomatoes and goat cheese together directly in the baking dish. Stir thoroughly to combine the mashed ingredients with the olive oil and seasonings, forming a creamy sauce.

Add the cooked pasta to the sauce in the baking dish. Pour in the 1/2 cup of reserved pasta water.

Mix everything thoroughly until the pasta is well coated with the creamy tomato and goat cheese sauce. Serve immediately.
