Preheat your oven to 375°F. Line a large baking sheet with parchment paper.

In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter.

Using your fingertips, rub the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. This process should be done quickly to keep the butter cold.

Stir in the dried oregano and shredded sharp cheddar cheese. Mix until just combined.

Gradually add cold water, 1 tablespoon at a time, mixing by hand until the dough just comes together. Be careful not to overmix. You may not need all the water.

Place the dough onto a piece of parchment paper. Top with another piece of parchment paper and, using a rolling pin, roll out the dough into a thin, rectangular sheet, about 1/8-inch thick.

Remove the top layer of parchment paper. Evenly sprinkle the black sesame seeds and white sesame seeds over the surface of the rolled-out dough, gently pressing them in with the rolling pin or your hand.

Using a knife or a pizza cutter, cut the dough into individual rectangular strips, approximately 1/2-inch wide and 4-5 inches long.

Carefully transfer the cut cheese sticks onto the prepared baking sheet, leaving a little space between each stick.

Bake for 12-15 minutes, or until the cheese sticks are golden brown and crisp. Keep a close eye on them to prevent burning.

Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
