Preheat the oven to 400°F (200°C). Lightly grease a baking dish.

Pat the cod fillets dry with paper towels. Season them generously with salt, black pepper, dried oregano, and dried thyme.

In a medium bowl, combine the halved cherry tomatoes, pitted Kalamata olives, minced garlic cloves, lemon zest, lemon juice, optional red pepper flakes, and 1 tablespoon of extra-virgin olive oil. Mix well to combine.

Place the seasoned cod fillets in the prepared baking dish. Spoon the tomato-olive mixture evenly around and over the fillets.

Bake for 20–25 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Once baked, sprinkle the dish with the fresh chopped parsley and fresh chopped basil. Drizzle with a little extra olive oil, if desired, and serve immediately with lemon wedges on the side.
