While the potatoes are cooking, prepare the braising sauce. In a medium bowl, combine the soy sauce, honey, mirin, minced garlic, and sesame oil. Whisk until well combined.

Once the potatoes have cooked for 18 minutes, reduce the heat to low. Pour the prepared braising sauce into the pan with the potatoes and mix everything together gently to coat the potatoes evenly.

Increase the heat to medium-low and continue to cook, stirring frequently, for 4 minutes, or until the sauce has thickened slightly and the potatoes appear a little wrinkly.

Remove the pan from the heat. Transfer the gamja jorim to an airtight container. Sprinkle with sesame seeds before serving or storing.
