Place the chicken breast in a medium pot and cover with water. Bring to a boil over medium-high heat, then reduce heat and simmer for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F. Remove chicken from water, let cool slightly, then shred using two forks or your hands. Place the shredded chicken into a large mixing bowl.

Add the diced celery stick to the bowl with the shredded chicken.

Add the diced purple onion to the bowl.

Add the sliced pepperoncinis to the mixture.
