In a large skillet or Dutch oven, melt 2 tbsp unsalted butter and 1 tbsp olive oil over medium-low heat. Add the thinly sliced yellow onions and 1 tsp granulated sugar. Cook, stirring occasionally, for 25-30 minutes, or until the onions are deeply golden brown and very soft. Season with 1/2 tsp salt and 1/4 tsp freshly ground black pepper.

Preheat your oven to 375°F. While the onions are caramelizing, prepare the cheese sauce. In a separate saucepan, melt 2 tbsp unsalted butter over medium heat. Whisk in 2 tbsp all-purpose flour and cook for 1 minute, stirring constantly, to create a roux. Gradually whisk in 2 cups warm milk until smooth. Bring to a gentle simmer, then reduce heat to low and cook, stirring, for 3-5 minutes until the sauce thickens. Remove from heat and stir in 1 1/2 cups of the shredded sharp cheddar cheese until melted and smooth.

Once the onions are caramelized, stir them into the cheese sauce. Pour the mixture into a 2-quart baking dish. Sprinkle the remaining 1/2 cup shredded sharp cheddar cheese and 1/2 cup bread crumbs evenly over the top.
