Preheat the oven to 375°F. Line a baking sheet with parchment paper.

On the prepared baking sheet, spread 3/4 cup of the freshly grated part-skim low-moisture mozzarella cheese into a thin, tortilla-sized circle. Repeat for the second wrap. Top each cheese circle with 7-8 pepperoni slices. Sprinkle with oregano and red pepper flakes.

Bake for 10-12 minutes, or until the edges are crispy and golden brown. Allow the wraps to cool slightly on the baking sheet.

While the wraps are baking, prepare the romaine lettuce. Slice the head of romaine lettuce lengthwise, then chop it into thin strips. Rinse the chopped lettuce under cold water and dry it very well using a salad spinner.

In a medium bowl, combine all the ingredients for the Caesar dressing: mayonnaise, Greek yogurt, lemon juice, Worcestershire sauce, Dijon mustard, grated garlic, grated Parmesan cheese, and black pepper. Mix thoroughly until well combined and smooth.

In a separate large bowl, toss the prepared romaine lettuce with most of the Caesar dressing, the crushed croutons, and some extra Parmesan cheese.

Once the baked cheese wraps have cooled slightly and are pliable, fill each wrap with the prepared Caesar salad. If desired, top with extra Parmesan cheese, additional crushed croutons, and a drizzle of any remaining dressing.
