Finely chop the onion. Heat a large pan over medium-high heat and coat with nonstick spray. Add the chopped onion to the pan.

Cook the onion for 10 to 15 minutes, stirring occasionally. Add small splashes of water as needed to help soften and caramelize the onions. Once browned and caramelized, remove the onions from the pan and set aside.

To assemble the egg rolls, lay one egg roll wrapper down in a diamond shape on a clean surface.

Fold the bottom corner of the wrapper over the filling, tucking it in tightly.

Fold in both side corners towards the center.

Roll the wrapper tightly upwards towards the top corner.

Before sealing, dip your finger into the beaten egg wash and brush it along the top edge of the wrapper to seal the egg roll shut.

Repeat the assembly process for the remaining 9 egg rolls until all 10 are made.
Heat 1 tablespoon of avocado oil in a large pan or skillet over medium-high heat.

Once the oil is hot, carefully add the egg rolls, seam-side down, to the pan. Cook in batches if necessary to avoid overcrowding.

Cook the egg rolls for about 2 minutes per side, rotating them until they are golden brown and crispy all around.

While the egg rolls are cooking, prepare the smash sauce. In a small bowl, combine the plain nonfat Greek yogurt, sugar-free ketchup, pickle juice, and paprika. Mix until smooth and well combined.
