Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides to easily lift the bars out later.

In a large mixing bowl, combine the brown sugar, granulated sugar, all-purpose flour, baking soda, and salt. Whisk briefly to ensure all dry ingredients are well distributed.

Pour the melted butter and crack the egg into the dry ingredients. Mix with a spoon or spatula until a cohesive cookie dough forms. Do not overmix.

Fold in the semi-sweet chocolate chips until evenly distributed throughout the cookie dough.

Arrange the graham cracker sheets in a single layer at the bottom of the prepared baking pan, breaking them as needed to fit snugly and cover the entire base.

Take approximately half of the prepared cookie dough and carefully spread it evenly over the graham cracker layer. It may be easier to flatten small pieces of dough and then press them together to form a continuous layer.

Evenly sprinkle the mini marshmallows over the cookie dough layer.

Distribute the broken pieces of milk chocolate bar on top of the marshmallows.

Take the remaining cookie dough and gently place and spread it on top of the chocolate and marshmallow layer. Again, flatten small sections and carefully press them together to cover the top as much as possible.

Bake in the preheated oven for 25 minutes, or until the top is golden brown and the marshmallows are puffed and slightly caramelized.

Once baked, remove the pan from the oven. Allow the S'mores Cookie Bars to cool in the pan for at least 15 minutes before lifting them out using the parchment paper overhang. This allows the layers to set.

Cut into squares and serve warm or at room temperature.
