Preheat your oven to 450°F (232°C). Prepare a baking tray by lining it with parchment paper or lightly greasing it.

Peel and roughly chop the onion. Core, deseed, and roughly chop the bell pepper. Roughly chop the fresh cilantro and fresh green chilies (adjust chili amount to your spice preference). Peel the garlic clove.

Place the chopped onion, bell pepper, fresh cilantro, fresh chilies, and garlic clove into a food processor. Process until all ingredients are very finely minced, almost forming a paste-like consistency.

In a large mixing bowl, combine the ground beef, the finely minced vegetable and herb mixture, and the breadcrumbs.

Add the seasonings: paprika, black pepper, coriander seeds, red chili powder, and salt to the bowl.

Using your hands, thoroughly mix and knead all the ingredients together. Continue mixing until the meat mixture becomes cohesive and slightly sticky. This is crucial for the kebabs to hold their shape during cooking.

Take a portion of the meat mixture (about 1/2 cup) and firmly press it onto a flat metal skewer. Alternatively, shape it into an elongated patty if not using skewers. Use your fingers to create the traditional indentations along the length of the kebab.

Carefully place the shaped kebabs onto the prepared baking tray.

Bake the kebabs in the preheated oven for 15–20 minutes, or until they are cooked through and nicely browned. The internal temperature should reach 160°F (71°C).

Remove the cooked kebabs from the oven. Serve hot, garnished with fresh cilantro and sliced onions as desired. These kebabs are delicious with rice or flatbread.
