Preheat your oven to 375°F. Lightly grease an 8x8 inch or 9x9 inch baking dish.

In a large mixing bowl, combine the sliced apples, 1/2 cup granulated sugar, 2 tablespoons all-purpose flour, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1 tablespoon lemon juice. Toss gently until the apples are evenly coated.

Pour the apple mixture into the prepared baking dish and spread it evenly.

In a separate medium mixing bowl, combine 1 cup all-purpose flour, 3/4 cup old-fashioned rolled oats, 1/2 cup packed light brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt. Mix well.

Add the cold, cut butter pieces to the dry topping ingredients. Using your fingers, a pastry blender, or two knives, cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.

Evenly sprinkle the crisp topping over the apple mixture in the baking dish.

Bake for 40-45 minutes, or until the topping is golden brown and the apples are tender and bubbly. If the topping browns too quickly, you can loosely tent the dish with aluminum foil.

Remove from the oven and let cool for at least 10-15 minutes before serving. This allows the filling to set slightly. Serve warm with a scoop (or two!) of vanilla ice cream.
